In the intimate Shinsaibashi counter setting, the chef introduces sushi’s approximately 400-year development, the character of the restaurant, and the roles of rice temperature, seasoning, fish, knife work, and balanced presentation.
Watch professional hand technique
The chef demonstrates four pieces of nigiri and one roll, showing the controlled pressure needed to shape rice without compacting it. Guests then prepare four pieces of their own sushi with hands-on guidance.
Continue into a complete dinner
The two-hour program extends beyond the workshop into a composed meal with an appetizer, fried item, and dessert as listed by the operator. Only eight counter seats are available, and ingredients change according to season and market supply.
